Each Masterbuilt Smoker has removable racks, the number of the racks depends on the model but the average number is four racks. They are very easy to remove, just pull them out as they slide perfectly. You can then wash them in your dishwasher to keep your unit clean. Put an aluminum pan on the bottom of your electric smoker to catch the oil and juices and make the clean up easier afterward. Put your wood chips in the rack on the bottom. Depending on how you want the meat to be done, you can either close the went completely, leave it open or somewhere in between. At the bottom side of the unit you can find a handle which is actually a chip tray. It is used to add more chips during cooking so that you do not open the unit because that would not be good for the meat. Turn the handle and pull the tray out, add some chips in it and pull it back in. By turning the handle again it will drop the chips into the rack.
